The Chiostro degli Scolopi is a place waiting to be discovered. Dining with us does not simply mean tasting top-quality products, but above all embarking on a true journey back in time.
Our dishes are “ancient” creations, rooted in the Salento and rural culinary tradition.
Our meats, sourced exclusively from free-range farms, are carefully prepared and subjected to a refined aging process, ensuring that every bite becomes a true sensory experience.







The Chef
Antonio Carbone, the host, brings with him many years of experience in the world of hospitality and gastronomy.
In 1990, he opened his first business, a small wood-fired pizzeria. Then, between 1999 and 2000, he decided to “go beyond,” giving birth to Puerto Escondido. He further refined his craft, specializing in the art of fine cuisine. In 2003, when natural gas arrived in Tricase, he once again renewed and upgraded his culinary workshop.
In 2022, he moved to the current location, where Il Chiostro degli Scolopi came to life: a unique place, rich in history and filled with genuine, distinctive flavors.
